These are some of my favorite

    Chocolate Chip Scones
    1 3/4 cups flour
    2 tsps baking powder
    1/3 cup orange juice
    5 tbsps margerine
    1/2 tsp salt
    1/3 serving packet sugar
1/2 cup mini chips chocolate chips

Whisk together flour, sugar, baking powder and salt. Cut in butter.
Stir in orange juice and chocolate chips.
Roll into a 9″ circle (approx. 1/2″ thick). Then cut into about 10 triangles.
Place on greased baking sheet. Bake at 400° F (200° C) for approximately 12 minutes.
(instead of using chocolate chips and orange juice, you could make them plain or with raisins and apple juice, or cranberries and orange juice.)

    Chunky potatoe fries
    600 g potatoes, chipped
    1 tsp sunflower oil spray
    24 fls oz boiled water
    2 cubes beef stock
    Directions
Slice up unpeeled potatoes into half-moon shaped pieces and add to pan.
Crumble 2 beef stock cubes onto potatoes and add water to cover.
Simmer potatoes for about 10 minutes, until they start to soften, then drain.
Place drained potatoes onto a baking tray and spray with sunflower oil (low calorie) or similar type spray. About 5 or 6 squirts should be enough to cover.
Heat oven to 375° F (200° C) and bake for about 30 minutes, until golden, turning half way through.
Tip: you can retain the liquid that the potatoes were boiled in to use as a basis for soup. I use to make a carrot and onion soup.

    Creamy Chicken Curry
    1/4 cup starch
4 breasts , bone and skin removed chicken breast
    12 apricots dried apricots
    2 large onions, chopped
1 cup, pieces or slices mushrooms
    1 can tomatoes, chopped
    2 tbsps tomato puree
    1 container yogurt, low fat
    2 tablespoons olive oil
    1 tsp cumin
    1 tsp garlic powder
    2 tsps coriander
    1 tsp saffron
    1 tsp ginger
    1/2 tsp red chili sauce

Chop chicken breasts into chunks, and stir-fry until golden in a little olive oil. Drain and place to one side.
Soften the onions in a little olive oil. Whilst these are cooking, mix the spices and puree together in a bowl to form a paste.
Add to pan, then return chicken, stir through; then add the rest of the ingredients.
Bring to boil, reduce heat and simmer for 20 minutes. It may be necessary to add a little water if the mixture starts to thicken too much.
At end of cooking time, the remaining liquid should be a thick consistency. If necessary boil rapidly to reduce whilst stirring constantly.
Remove from heat and stir through yogurt thoroughly just before serving.
Serve with a fresh green salad, dressed with lemon juice, olive oil and mint.
